Turkey Pasta Bake

Lightly spicy, tomato and cream based turkey pasta bake

Ingredients

  • 400g of large pasta shells
  • 1 white onion (chopped)
  • 500g of turkey mince
  • 3 cloves of garlic (crushed)
  • 1 tin of chopped tomatoes
  • 1 tbsp of chipotle paste
  • 1 cube of chicken stock
  • 250g of mascarpone
  • 200g of cheddar cheese (grated)
  • black pepper
  • oregano
  • 1 handful of parmesan (grated)

Instructions

  1. Start boiling large pasta shells in a saucepan.
  2. Fry the white onion in a frying pan until soft.
  3. Add the turkey mince and fry it until browned all over.
  4. Add garlic, chopped tomatoes, chipotle paste, and the whole chicken stock cube.
  5. Bring the mixture to the boil, then reduce to a simmer.
  6. Once the pasta is cooked, drain it, retaining some pasta water.
  7. Mix mascarpone into the pasta water over a low heat.
  8. Add 140g of cheddar cheese to the mascarpone sauce. Season well with black pepper and oregano.
  9. Add the pasta to the cheese sauce and mix.
  10. Add the turkey mixture to an oven dish.
  11. Pour the pasta and cheese sauce on top of the turkey mixture.
  12. Sprinkle the remaining 60g of cheddar cheese and parmesan on top.
  13. Bake in the oven for at 200 °C or until golden.
