# Turkey Pasta Bake

## Ingredients

- 400 g large pasta shells
- 1 piece white onion, chopped
- 500 g turkey mince
- 3 clove garlic, crushed
- 1 tin chopped tomatoes
- 1 tbsp chipotle paste
- 1 cube chicken stock
- 250 g mascarpone
- 200 g cheddar cheese, grated
- black pepper
- oregano
- 1 handful parmesan, grated

## Instructions

1. Start boiling 400g of large pasta shells in a saucepan.
2. Fry the 1 white onion in a frying pan until soft.
3. Add the 500g of turkey mince and fry it until browned all over.
4. Add 3 cloves of garlic, 1 tin of chopped tomatoes, 1 tbsp of chipotle paste, and the whole 1 cube of chicken stock cube.
5. Bring the mixture to the boil, then reduce to a simmer.
6. Once the pasta is cooked, drain it, retaining some pasta water.
7. Mix 250g of mascarpone into the pasta water over a low heat.
8. Add 140g of cheddar cheese to the mascarpone sauce. Season well with black pepper and oregano.
9. Add the pasta to the cheese sauce and mix.
10. Add the turkey mixture to an oven dish.
11. Pour the pasta and cheese sauce on top of the turkey mixture.
12. Sprinkle the remaining 60g of cheddar cheese and 1 handful of parmesan on top.
13. Bake in the oven for 20 minutes at 200 °C or until golden.
