# Spicy Tomato & Balsamic Pasta

## Ingredients

- olive oil
- 280 g sun-dried tomato, chopped
- 1 red onion, chopped
- 4 clove garlic, crushed
- 1 pinch salt
- 1 tsp smoked paprika
- 1 tsp chili powder
- 0.5 tsp cayenne pepper
- 330 g cherry tomato, chopped
- 1 tbsp tomato puree
- 2 tbsp harissa paste
- 300 g pasta
- 600 ml vegetable stock
- 1 tbsp balsamic vinegar
- 100 ml double cream
- spinach
- basil leaves
- pepper

## Instructions

1. Heat a large saucepan over a medium heat and heat a drizzle of olive oil left over from the 280g of sun-dried tomatoes.
2. Once heated, add the 1 red onion, 4 cloves of garlic, and 1 pinch of salt and cook for approx 6 minutes.
3. Once the onions have softened, add the 1 tsp of smoked paprika, 1 tsp of chili powder, and 0.5 tsp of cayenne pepper.
4. Add the 330g of cherry tomatoes and mix well.
5. Cook for a few minutes until the tomatoes begin to soften.
6. Add the sun-dried tomatoes, 1 tbsp of tomato puree, and 2 tbsp of harissa paste and cook for a few more minutes until you have a thick sauce.
7. Add the 300g of pasta and coat completely in sauce.
8. Add the 600ml of vegetable stock.
9. Cook until the pasta has cooked and the sauce has thickened (approx 20 minutes).
10. Add the 1 tbsp of balsamic vinegar, 100ml of double cream, spinach, and basil leaves.
11. Mix well until spinach has wilted. Season with pepper.
