# Slow Cooker Thai Red Chicken Curry

## Ingredients

- 3 chicken breast, diced
- 1 white onion, diced
- 3 tbsp red curry paste
- 1 tbsp sriracha
- 1 tin coconut milk
- 1 tbsp garlic
- 1 tbsp ginger
- 1 tbsp dark soy sauce
- 1 tbsp lime juice
- sweet peppers, diced
- 1 tbsp cornflour
- 1 tbsp water
- rice
- Thai crackers

## Instructions

1. Add the diced 3 chicken breast, diced 1 white onion, 3 tbsp of red curry paste, 1 tbsp of sriracha, 1 tin of coconut milk, 1 tbsp of garlic, 1 tbsp of ginger, 1 tbsp of dark soy sauce, and 1 tbsp of lime juice into the slow cooker.
2. Cook on high for 4 hours or on low for 7 hours.
3. Add the diced sweet peppers for the last 20 minutes of cooking.
4. If the sauce needs to be thickened, mix 1 tbsp of cornflour with 1 tbsp of water and stir it in.
5. Serve with rice and Thai crackers.
