Slow Cooker Mexican Chicken

An easy slow cooker Mexican chicken dish, perfect for tacos or burritos.

Ingredients

  • 1 white onion (diced)
  • 650g of chicken breast
  • 1 tsp of hot chilli powder
  • 1 tsp of paprika
  • 1 tsp of cayenne pepper
  • 1 tsp of cumin
  • 1 tsp of garlic granules
  • 1 tsp of onion salt
  • 2 bell peppers (sliced) – red and yellow
  • 2 tbsp of chipotle paste
  • 1 tin of mixed beans
  • 500g of tomato passata
  • tortilla wraps – to serve
  • cheddar cheese – to serve

Instructions

  1. Add the onion, chicken, spices, peppers, chipotle paste, mixed beans and passata to the slow cooker.
  2. Mix well.
  3. Cook on High for 4 hours or Low for 8 hours.
  4. Once cooked, shred the chicken.
  5. Add the shredded chicken to wraps or boats.
  6. Cover with grated cheese and melt in the oven.
