# Slow Cooker Mexican Chicken

## Ingredients

- 1 piece white onion, diced
- 650 g chicken breast
- 1 tsp hot chilli powder
- 1 tsp paprika
- 1 tsp cayenne pepper
- 1 tsp cumin
- 1 tsp garlic granules
- 1 tsp onion salt
- 2 piece bell pepper, sliced (red and yellow)
- 2 tbsp chipotle paste
- 1 tin mixed beans
- 500 g tomato passata
- tortilla wrap (to serve)
- cheddar cheese (to serve)

## Instructions

1. Add the 1 white onion, 650g of chicken breasts, all the spices  (1 tsp of hot chilli powder, 1 tsp of paprika, 1 tsp of cayenne pepper, 1 tsp of cumin, 1 tsp of garlic granules, 1 tsp of onion salt),  2 bell peppers, 2 tbsp of chipotle paste, 1 tin of mixed beans, and 500g of tomato passata to the slow cooker.
2. Mix well.
3. Cook on high for 4 hours or low for 8 hours.
4. Once cooked, shred the chicken with two forks.
5. Add the shredded chicken to tortilla wraps or boats.
6. Cover with cheddar cheese and melt it in the oven.
