Slow Cooker Mexican Chicken

Ingredients
- 1 white onion (diced)
- 650g of chicken breast
- 1 tsp of hot chilli powder
- 1 tsp of paprika
- 1 tsp of cayenne pepper
- 1 tsp of cumin
- 1 tsp of garlic granules
- 1 tsp of onion salt
- 2 bell peppers (sliced) – red and yellow
- 2 tbsp of chipotle paste
- 1 tin of mixed beans
- 500g of tomato passata
- tortilla wraps – to serve
- cheddar cheese – to serve
Instructions
- Add the onion, chicken, spices, peppers, chipotle paste, mixed beans and passata to the slow cooker.
- Mix well.
- Cook on High for 4 hours or Low for 8 hours.
- Once cooked, shred the chicken.
- Add the shredded chicken to wraps or boats.
- Cover with grated cheese and melt in the oven.
