Slow Cooker Mexican Chicken

Ingredients

  • 1 white onion (diced)
  • 650g of chicken breast
  • 1 tsp of hot chilli powder
  • 1 tsp of paprika
  • 1 tsp of cayenne pepper
  • 1 tsp of cumin
  • 1 tsp of garlic granules
  • 1 tsp of onion salt
  • 2 bell peppers (sliced) – red and yellow
  • 2 tbsp of chipotle paste
  • 1 tin of mixed beans
  • 500g of tomato passata
  • tortilla wraps – to serve
  • cheddar cheese – to serve

Instructions

  1. Add the white onion, chicken breasts, all the spices (hot chilli powder, paprika, cayenne pepper, cumin, garlic granules, onion salt), bell peppers, chipotle paste, mixed beans, and tomato passata to the slow cooker.
  2. Mix well.
  3. Cook on high for or low for .
  4. Once cooked, shred the chicken with two forks.
  5. Add the shredded chicken to tortilla wraps or boats.
  6. Cover with cheddar cheese and melt it in the oven.
