# Sausage Jambalaya

## Ingredients

- 200 g long grain rice
- 1 tbsp olive oil
- 8 piece pork sausage, cut into pieces
- 1.5 tbsp cajun seasoning
- 1 piece white onion, finely chopped
- 1 tin chopped tomatoes
- 400 ml water
- chilli (optional, to taste)
- garlic (optional, to taste)
- paprika (optional, to taste)
- 150 g frozen vegetables (peas and peppers)
- salt (to taste)
- black pepper (to taste)

## Cookware

- sieve
- frying pan
- frying pan lid

## Instructions

1. Put the 200g of long grain rice in a sieve and rinse it thoroughly.
2. Heat the 1 tbsp of olive oil in a large frying pan and brown the 8 pork sausages for 2 minutes.
3. Stir in the 1.5 tbsp of cajun seasoning and 1 white onion, then cook for 2 minutes.
4. Add the rice and cook for 30 seconds, then pour in 1 tin of chopped tomatoes and 400ml of water.
5. Bring to the boil, lower the heat, and add chilli, garlic, and paprika to taste.
6. Cover with a frying pan lid and simmer for 10 minutes.
7. Stir in 150g of frozen vegetables and cook for another 10 minutes.
8. Season with salt and black pepper to taste.
