Sausage Jambalaya

A hearty Cajun-spiced one-pot rice dish with sausages and vegetables

Ingredients

  • 1 tbsp of olive oil
  • 8 pork sausagess (cut into pieces)
  • 1.5 tbsp of cajun seasoning
  • 1 white onion (finely chopped)
  • 200g of long grain rice
  • 1 tin of chopped tomatoes
  • 400ml of water
  • 150g of frozen vegetables – peas and peppers
  • chilli – optional, to taste
  • garlic – optional, to taste
  • paprika – optional, to taste
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Put the rice in a sieve and rinse thoroughly
  2. Heat the oil in a large pan and brown the sausages for a few minutes
  3. Stir in the Cajun seasoning and onion; cook for 2 minutes
  4. Add the rice and cook for 30 seconds, then pour in the chopped tomatoes and 400ml water
  5. Bring to the boil, lower the heat and add optional herbs and spices (chilli, garlic, paprika) to taste
  6. Cover with a lid and simmer for 10 minutes
  7. Stir in frozen vegetables and cook for another 10 minutes
  8. Season with salt and pepper to taste
