Sausage Jambalaya

A hearty Cajun-spiced one-pot rice dish with sausages and vegetables

Ingredients

  • 200g of long grain rice
  • 1 tbsp of olive oil
  • 8 pork sausages (cut into pieces)
  • 1.5 tbsp of cajun seasoning
  • 1 white onion (finely chopped)
  • 1 tin of chopped tomatoes
  • 400ml of water
  • chilli – optional, to taste
  • garlic – optional, to taste
  • paprika – optional, to taste
  • 150g of frozen vegetables – peas and peppers
  • salt – to taste
  • black pepper – to taste

Instructions

  1. Put the long grain rice in a sieve and rinse it thoroughly.
  2. Heat the olive oil in a large frying pan and brown the pork sausages for .
  3. Stir in the cajun seasoning and white onion, then cook for .
  4. Add the rice and cook for , then pour in chopped tomatoes and water.
  5. Bring to the boil, lower the heat, and add chilli, garlic, and paprika to taste.
  6. Cover with a frying pan lid and simmer for .
  7. Stir in frozen vegetables and cook for another .
