Salted Caramel Carmelitas

Ingredients

  • 230g of rolled oats
  • 250g of plain flour
  • 0.25 tsp of salt
  • 350g of brown sugar
  • 250g of butter (melted)

Caramel

  • 0.5 tsp of salt
  • 400g of caramel – carnations brand
  • 130g of dark chocolate (chopped into chunks)
  • 130g of milk chocolate (chopped into chunks)

Instructions

  1. Preheat oven to 180 °C and line a 9x9 inch baking tin with baking paper.
  2. In a large bowl, combine rolled oats, plain flour, 0.25 tsp of sea salt, and light soft brown sugar.
  3. Stir in the unsalted butter.
  4. Spoon about 2/3 of the mixture into the lined baking tin and press down with a spoon.
  5. Bake in the oven for until golden.
  6. In a small bowl mix the 0.5 tsp of sea salt into the caramel.
  7. Remove the baking tin from the oven and sprinkle over the 130g of dark chocolate and milk chocolate.
  8. Drizzle over the salted caramel and make sure it is spread evenly.
  9. Crumble over the remaining oat topping and bake for .
  10. Check whether the topping is golden, then bake for up to another if needed.
  11. Melt a little extra dark chocolate and drizzle over the top, then add a pinch of sea salt.
  12. Leave to cool for at least , preferably overnight.
