# Raspberry & White Chocolate Scones

## Ingredients

- 30 g butter
- 225 g self-raising flour (soda bread flour)
- 30 g caster sugar
- 140 ml buttermilk
- 75 g white chocolate chips (or chopped white chocolate)
- 1 handful frozen raspberries
- flour
- 50 g white chocolate, melted for decoration

## Instructions

1. Preheat the oven to 200°C.
2. Rub the 30g of butter into the 225g of self raising flour until it resembles a breadcrumb texture.
3. Add in the 30g of caster sugar.
4. Add in 140ml of buttermilk until it forms a dough. Only add enough milk to bind the ingredients; it should not be too soft or they will spread out too much.
5. Add 75g of white chocolate chips and 1 handful of frozen raspberries and combine. Do not overmix.
6. Put a little flour on your hands and roll the dough into 4-6 round scone shapes.
7. Place on a baking tray and bake for 18 minutes to 22 minutes.
8. Drizzle some 50g of white chocolate on top.
