# One Pot Cheesy Mexican Rice

## Ingredients

- 100 g chorizo, diced
- 500 g chicken breast, diced
- 2 tbsp mexican seasoning
- 1 onion, diced
- 2 bell pepper, diced
- 2 clove garlic, crushed
- 250 g basmati rice (uncooked)
- 120 ml single cream
- 200 ml milk (warmed)
- 600 ml chicken stock
- 100 g cheese

## Instructions

1. Fry off the 100g of chorizo in a pan until crisp, then remove and put to the side.
2. Add the 500g of chicken and 2 tbsp of mexican seasoning into the pan and cook for around 5 minutes. Take the chicken out of the pan and set aside.
3. Add the 1 onion and 2 peppers to the same pan and cook them until they are soft.
4. Add 2 cloves of garlic and cook for a few minutes .
5. Add the chicken, chorizo and 250g of basmati rice.
6. Once the rice is all mixed in, add in the 120ml of single cream, 200ml of milk, and 600ml of chicken stock.
7. Cover with a lid and cook on a low heat for 17 minutes or until the rice is soft.
8. Once cooked, season to taste, then sprinkle on the 100g of cheese and melt under a grill until golden.
