# Moroccan Chickpea & Sweet Potato Stew

## Ingredients

- 1 tbsp olive oil
- 2 white onion, chopped
- 1 carrot, chopped
- 4 clove garlic, crushed
- 2 tbsp harissa paste
- 1 tsp chilli powder
- 1 tin chickpeas, drained and rinsed
- 100 g red lentils
- 700 ml vegetable stock
- 500 g tomato passata
- 300 g sweet potato

## Instructions

1. Heat the 1 tbsp of olive oil in a large pan and fry the 2 white onion, 1 carrot, and 4 cloves of garlic for around 5 minutes.
2. Add the 2 tbsp of harissa paste and 1 tsp of chilli powder and fry for 2 minutes more.
3. Add the 1 tin of chickpeas, 100g of red lentils, 700ml of vegetable stock, and 500g of tomato passata and simmer for 15 minutes.
4. Add the 300g of sweet potato, cover, and simmer for 35 minutes until the sauce has thickened and reduced.
