# Marinated Satay Chicken

## Ingredients

- 3 piece chicken breast
- 3 clove garlic
- 3 tbsp soy sauce
- 4.5 tbsp lime juice
- 3 tbsp peanut butter
- 3 tbsp honey
- 1.5 tbsp tikka curry powder
- 320 g rice
- 400 ml coconut milk

## Instructions

1. Chop the 3 chicken breasts into strips.
2. Crush the 3 cloves of garlic.
3. Mix together 3 tbsp of soy sauce, 4.5 tbsp of lime juice, 3 tbsp of peanut butter, 3 tbsp of honey, 1.5 tbsp of tikka curry powder, and the crushed garlic in a bowl.
4. Marinate the chicken strips in the mixture for at least 30 minutes.
5. Bake the marinated chicken strips on a baking tray in the oven for 10 minutes, up to 15 minutes, at 180ºC. The chicken will be soft, but ensure it is cooked through.
6. Boil the 320g of rice in a saucepan.
7. Mix the 400ml of coconut milk with the remaining marinade.
8. Boil the marinade mixture in a saucepan until reduced well.
9. Place the rice and chicken on a plate.
10. Pour the reduced satay sauce over the chicken.
