Ingredients
- 3 chicken breasts
- 3 cloves of garlic
- 3 tbsp of soy sauce
- 4.5 tbsp of lime juice
- 3 tbsp of peanut butter
- 3 tbsp of honey
- 1.5 tbsp of tikka curry powder
- 320g of rice
- 400ml of coconut milk

Instructions
- Chop the chicken breasts into strips.
- Crush the garlic.
- Mix together soy sauce, lime juice, peanut butter, honey, tikka curry powder, and the crushed garlic in a bowl.
- Marinate the chicken strips in the mixture for at least .
- Bake the marinated chicken strips on a baking tray in the oven for , up to 15 minutes, at 180ºC. The chicken will be soft, but ensure it is cooked through.
- Boil the rice in a saucepan.
- Mix the coconut milk with the remaining marinade.
- Boil the marinade mixture in a saucepan until reduced well.
- Place the rice and chicken on a plate.
- Pour the reduced satay sauce over the chicken.
