Marinated Satay Chicken

Ingredients

  • 3 chicken breasts
  • 3 cloves of garlic
  • 3 tbsp of soy sauce
  • 4.5 tbsp of lime juice
  • 3 tbsp of peanut butter
  • 3 tbsp of honey
  • 1.5 tbsp of tikka curry powder
  • 320g of rice
  • 400ml of coconut milk

Instructions

  1. Chop the chicken breasts into strips.
  2. Crush the garlic.
  3. Mix together soy sauce, lime juice, peanut butter, honey, tikka curry powder, and the crushed garlic in a bowl.
  4. Marinate the chicken strips in the mixture for at least .
  5. Bake the marinated chicken strips on a baking tray in the oven for , up to 15 minutes, at 180ºC. The chicken will be soft, but ensure it is cooked through.
  6. Boil the rice in a saucepan.
  7. Mix the coconut milk with the remaining marinade.
  8. Boil the marinade mixture in a saucepan until reduced well.
  9. Place the rice and chicken on a plate.
  10. Pour the reduced satay sauce over the chicken.
