Lentil Soup

Ingredients

  • olive oil
  • 2 carrot (halved and sliced)
  • 1 white onion (diced)
  • 1 sweet potato (cubed)
  • 4 cloves of garlic (crushed)
  • 1 tbsp of curry powder
  • 1 tsp of cumin
  • 1 tsp of thyme
  • salt
  • 2 cups of red lentils (rinsed)
  • 1 tin of chopped tomatoes
  • 1.5l of chicken stock
  • 0.5 bags of spinach
  • black pepper

Instructions

  1. Heat olive oil in a large pot over a medium heat.
  2. Add the carrots, white onion and sweet potato and saute for around .
  3. Add the garlic, curry powder, cumin, thyme and salt. Cook until fragrant, around .
  4. Add the red lentils, chopped tomatoes and chicken stock. Stir to combine and bring to a simmer.
  5. Cover and reduce the heat to maintain a gentle simmer.
  6. Cook, stirring occasionally, until the lentils are tender, around .
  7. Remove from the heat and stir through the spinach until wilted.
  8. Season with pepper.
