Ingredients
- olive oil
- 2 carrot (halved and sliced)
- 1 white onion (diced)
- 1 sweet potato (cubed)
- 4 cloves of garlic (crushed)
- 1 tbsp of curry powder
- 1 tsp of cumin
- 1 tsp of thyme
- salt
- 2 cups of red lentils (rinsed)
- 1 tin of chopped tomatoes
- 1.5l of chicken stock
- 0.5 bags of spinach
- black pepper

Instructions
- Heat olive oil in a large pot over a medium heat.
- Add the carrots, white onion and sweet potato and saute for around .
- Add the garlic, curry powder, cumin, thyme and salt. Cook until fragrant, around .
- Add the red lentils, chopped tomatoes and chicken stock. Stir to combine and bring to a simmer.
- Cover and reduce the heat to maintain a gentle simmer.
- Cook, stirring occasionally, until the lentils are tender, around .
- Remove from the heat and stir through the spinach until wilted.
- Season with pepper.
