# Lentil Soup

## Ingredients

- olive oil
- 2 carrot, halved and sliced
- 1 white onion, diced
- 1 sweet potato, cubed
- 4 clove garlic, crushed
- 1 tbsp curry powder
- 1 tsp cumin
- 1 tsp thyme
- salt
- 2 uk_cup red lentils, rinsed
- 1 tin chopped tomatoes
- 1.5 l chicken stock
- 0.5 bag spinach
- black pepper

## Instructions

1. Heat olive oil in a large pot over a medium heat.
2. Add the 2 carrots, 1 white onion and 1 sweet potato and saute for around 5 minutes.
3. Add the 4 cloves of garlic, 1 tbsp of curry powder, 1 tsp of cumin, 1 tsp of thyme and salt. Cook until fragrant, around 1 minute.
4. Add the 2 cups of red lentils, 1 tin of chopped tomatoes and 1.5l of chicken stock. Stir to combine and bring to a simmer.
5. Cover and reduce the heat to maintain a gentle simmer.
6. Cook, stirring occasionally, until the lentils are tender, around 20 minutes.
7. Remove from the heat and stir through the 0.5 bags of spinach until wilted.
8. Season with pepper.
