Creamy Chilli Tomato Pasta

A spicy and creamy tomato pasta dish with bacon and onion.

Ingredients

  • olive oil – for frying
  • 1 white onion (thinly sliced)
  • 4 slices of bacon (cut)
  • 3 cloves of garlic (crushed)
  • 320g of pasta
  • 1 tsp of chilli flakes
  • 1 tin of chopped tomatoes
  • 2 tbsp of tomato puree
  • 1 tsp of oregano – dried
  • salt – to taste
  • black pepper – to taste
  • 100ml of double cream

Instructions

  1. Heat the olive oil in a large frying pan over a medium heat.
  2. Add the white onion slices and bacon, then fry them for , up to 6 minutes, or until softened.
  3. Add the garlic and fry it for .
  4. Start cooking pasta according to package instructions in a saucepan.
  5. Stir the chilli flakes into the onion and bacon mixture.
  6. Add chopped tomatoes, tomato puree, and oregano.
  7. Season with salt and black pepper.
  8. Simmer for , stirring regularly until thickened.
  9. Stir in double cream and return to a gentle simmer.
  10. Mix in the cooked pasta.
