Simple Creamy Chicken Curry
A simple mixture of basic spices with cream, chicken and onions

Ingredients
- 3 chicken breasts (cubed)
- 2 white onions (cubed)
- 250ml of single cream
- 430ml of chicken stock – double strength
- butter – for frying
- 400g of rice
Spice Mix
- 4 tsp of plain flour
- 2 tsp of curry powder
- 0.5 tsp of hot chilli powder
- 1 tsp of ground coriander
- 1 tsp of cayenne pepper
- 1 tsp of paprika
- 1 tsp of brown sugar
Extras
- prawn crackers
Instructions
- Melt the butter in a saucepan
- Fry the onions in the butter until brown
- Mix all spice mix ingredients in a large bowl
- Mix the chicken in with the spice mix, covering well
- Pour the contents of the bowl into the saucepan
- Pour in the stock
- Simmer the mixture for 30 minutes, then add the cream
- Simmer for a further 30 minutes. Boil the rice during this period to be ready
- Serve on a bed of rice with a side of prawn crackers
