Simple Creamy Chicken Curry

A simple mixture of basic spices with cream, chicken and onions

Ingredients

  • butter – for frying
  • 2 white onions (cubed)
  • 3 chicken breasts (cubed)
  • 430ml of chicken stock – double strength
  • 250ml of single cream
  • 400g of rice

Spice Mix

  • 4 tsp of plain flour
  • 2 tsp of curry powder
  • 0.5 tsp of hot chilli powder
  • 1 tsp of ground coriander
  • 1 tsp of cayenne pepper
  • 1 tsp of paprika
  • 1 tsp of brown sugar

  • prawn crackers

Equipment

  • saucepan

Instructions

  1. Melt butter in a saucepan.
  2. Fry the white onions in the butter until brown.
  3. Mix all the spice mix ingredients in a large bowl.
  4. Mix the chicken pieces into the spice mix, covering it well.
  5. Pour the contents of the bowl into the saucepan.
  6. Pour in chicken stock.
  7. Simmer the mixture for , then add single cream.
  8. Simmer for a further . Boil rice in a separate saucepan during this time so it is ready.
  9. Serve on a bed of rice with a side of prawn crackers.
