# Simple Creamy Chicken Curry

## Ingredients

- butter (for frying)
- 2 piece white onion, cubed
- 3 piece chicken breast, cubed
- 430 ml chicken stock (double strength)
- 250 ml single cream
- 400 g rice

### Spice Mix

- 4 tsp plain flour
- 2 tsp curry powder
- 0.5 tsp hot chilli powder
- 1 tsp ground coriander
- 1 tsp cayenne pepper
- 1 tsp paprika
- 1 tsp brown sugar

### Extras

- prawn crackers

## Cookware

- saucepan
- bowl

## Instructions

1. Melt butter in a saucepan.
2. Fry the 2 white onions in the butter until brown.
3. Mix all the spice mix ingredients in a large bowl.
4. Mix the 3 chicken pieces into the spice mix, covering it well.
5. Pour the contents of the bowl into the saucepan.
6. Pour in 430ml of chicken stock.
7. Simmer the mixture for 30 minutes, then add 250ml of single cream.
8. Simmer for a further 30 minutes. Boil 400g of rice in a separate saucepan during this time so it is ready.
9. Serve on a bed of rice with a side of prawn crackers.
