Simple Creamy Chicken Curry

A simple mixture of basic spices with cream, chicken and onions

Ingredients

  • 3 chicken breasts (cubed)
  • 2 white onions (cubed)
  • 250ml of single cream
  • 430ml of chicken stock – double strength
  • butter – for frying
  • 400g of rice

Spice Mix

  • 4 tsp of plain flour
  • 2 tsp of curry powder
  • 0.5 tsp of hot chilli powder
  • 1 tsp of ground coriander
  • 1 tsp of cayenne pepper
  • 1 tsp of paprika
  • 1 tsp of brown sugar

Extras

  • prawn crackers

Instructions

  1. Melt the butter in a saucepan
  2. Fry the onions in the butter until brown
  3. Mix all spice mix ingredients in a large bowl
  4. Mix the chicken in with the spice mix, covering well
  5. Pour the contents of the bowl into the saucepan
  6. Pour in the stock
  7. Simmer the mixture for 30 minutes, then add the cream
  8. Simmer for a further 30 minutes. Boil the rice during this period to be ready
  9. Serve on a bed of rice with a side of prawn crackers
