# Chicken Gyros with Tzatziki

## Ingredients

### Marinade

- 3 clove garlic, minced
- 1 tbsp white wine vinegar
- 1 tbsp olive oil
- 3 tbsp Greek yoghurt
- 1.5 tbsp dried oregano
- 1 tsp salt
- black pepper
- 1 kg chicken thigh

### Tzatziki

- 0.5 cucumber, seeded and grated
- 1 us_cup Greek yoghurt
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1 clove garlic, minced
- 0.25 tsp salt
- black pepper

### Salad and Assembly

- tomato

- lettuce
- 1 tbsp olive oil
- pita

## Instructions

1. Add 3 cloves of garlic, 1 tbsp of white wine vinegar, 1 tbsp of olive oil, 3 tbsp of Greek yoghurt, 1.5 tbsp of dried oregano, 1 tsp of salt, and black pepper into a large bowl and mix.
2. Add 1kg of chicken thigh fillet and ensure to cover all the chicken.
3. Cover the bowl with cling film and marinate in the fridge for a minimum of 3 hours.
4. Make the tzatziki. Cut 0.5 cucumber in half lengthwise.
5. Use a teaspoon to scrape the watery seeds out.
6. Coarsely grate the cucumber then wrap in kitchen roll and squeeze to remove excess liquid.
7. Put the cucumber in a bowl. Add 1 cup of Greek yoghurt, 1 tbsp of lemon juice, 1 tbsp of olive oil, 1 clove of garlic, 0.25 tsp of salt, and black pepper.
8. Mix to combine then let the ingredients meld for at least 20 minutes.
9. Prepare the salad by slicing tomato, red onion, and lettuce.
10. Heat 1 tbsp of olive oil in a pan on medium-high heat.
11. Cook the marinated chicken for 3 minutes on each side or until cooked through.
12. Once cooked through, remove from the pan and let it rest for 5 minutes covered with foil.
13. Heat pita and slice the chicken.
14. Assemble the gyros on a piece of baking paper or tin foil by placing the salad in the middle of the bread, topping with chicken and tzatziki, then rolling it up, enclosing it in the paper.
