Ingredients
- 300g of farfalle – or penne pasta
- 600g of chicken breast (cut into chunks)
- 1 chorizo (chopped)
- 3 cloves of garlic (crushed)
- 1 tin of cherry tomato – 400g
- 1 tin of chopped tomatoes – 400g
- fresh basil (torn)
- 2 tsp of oregano – dried
- 75g of light soft cheese
- 150g of mozzarella (finely chopped)
- parmesan (grated)

Instructions
- Preheat the oven to 200 °C and begin to cook farfalle according to package instructions in a saucepan.
- Heat a frying pan over a high heat and cook the chicken pieces for .
- Add the chorizo and garlic, then cook them for , up to 4 minutes, until the oils are released.
- Tip in cherry tomato and chopped tomatoes, then bring to a simmer.
- Once simmering, add fresh basil, 1.5 tsp of oregano, light soft cheese, and some seasoning.
- Stir until the cheese has melted.
- Add the cooked pasta and mix well.
- Transfer to an oven dish and scatter over mozzarella, parmesan, and 0.5 tsp of oregano.
- Bake for , up to 25 minutes.
