Chicken and Chorizo Pasta Bake

A creamy and flavorful pasta bake with chicken, chorizo, and cherry tomatoes.

Ingredients

  • 300g of farfalle – or penne pasta
  • 1 chorizo (chopped)
  • 3 cloves of garlic (crushed)
  • 600g of chicken breast (cut into chunks)
  • 1 tin of cherry tomato – 400g
  • 1 tin of chopped tomatoes – 400g
  • 2 tsp of oregano – dried
  • fresh basil (torn)
  • 75g of light soft cheese
  • parmesan (grated)
  • 150g of mozzarella (finely chopped)

Instructions

  1. Preheat oven to 200°C and begin to cook pasta.
  2. Heat frying pan over a high heat and cook chicken for 5 mins.
  3. Add the chorizo and garlic and cook for 3-4 mins until the oils are released.
  4. Tip in both cans of tomatoes and bring to a simmer
  5. Add the basil, 3/4 oregano, soft cheese and some seasoning.
  6. Stir until cheese has melted.
  7. Add the pasta and mix well.
  8. Transfer to oven dish and scatter on mozzarella, parmesan & oregano.
  9. Bake for 20-25 mins.
