Chicken and Chorizo Pasta Bake

Ingredients

  • 300g of farfalle – or penne pasta
  • 600g of chicken breast (cut into chunks)
  • 1 chorizo (chopped)
  • 3 cloves of garlic (crushed)
  • 1 tin of cherry tomato – 400g
  • 1 tin of chopped tomatoes – 400g
  • fresh basil (torn)
  • 2 tsp of oregano – dried
  • 75g of light soft cheese
  • 150g of mozzarella (finely chopped)
  • parmesan (grated)

Instructions

  1. Preheat the oven to 200 °C and begin to cook farfalle according to package instructions in a saucepan.
  2. Heat a frying pan over a high heat and cook the chicken pieces for .
  3. Add the chorizo and garlic, then cook them for , up to 4 minutes, until the oils are released.
  4. Tip in cherry tomato and chopped tomatoes, then bring to a simmer.
  5. Once simmering, add fresh basil, 1.5 tsp of oregano, light soft cheese, and some seasoning.
  6. Stir until the cheese has melted.
  7. Add the cooked pasta and mix well.
  8. Transfer to an oven dish and scatter over mozzarella, parmesan, and 0.5 tsp of oregano.
  9. Bake for , up to 25 minutes.
