# Chicken and Chorizo Pasta Bake

## Ingredients

- 300 g farfalle (or penne pasta)
- 600 g chicken breast, cut into chunks
- 1 piece chorizo, chopped
- 3 clove garlic, crushed
- 1 tin cherry tomato (400g)
- 1 tin chopped tomatoes (400g)
- fresh basil, torn
- 2 tsp oregano (dried)
- 75 g light soft cheese
- 150 g mozzarella, finely chopped
- parmesan, grated

## Instructions

1. Preheat the oven to 200 °C and begin to cook 300g of farfalle according to package instructions in a saucepan.
2. Heat a frying pan over a high heat and cook the 600g of chicken pieces for 5 minutes.
3. Add the 1 chorizo and 3 cloves of garlic, then cook them for 3 minutes, up to 4 minutes, until the oils are released.
4. Tip in 1 tin of cherry tomato and 1 tin of chopped tomatoes, then bring to a simmer.
5. Once simmering, add fresh basil, 1.5 tsp of oregano, 75g of light soft cheese, and some seasoning.
6. Stir until the cheese has melted.
7. Add the cooked pasta and mix well.
8. Transfer to an oven dish and scatter over 150g of mozzarella, parmesan, and 0.5 tsp of oregano.
9. Bake for 20 minutes, up to 25 minutes.
