# Cheesy Cajun Chicken & Potato Bake

## Ingredients

### Potato Seasoning

- 620 g potato, cubed
- 1 tbsp garlic granules
- 1 tbsp smoked paprika
- 1 tbsp cajun seasoning
- 1 tbsp oregano
- 1 tsp salt

### Chicken and Sauce

- 5 bell pepper, diced
- 1000 g chicken breast, diced
- 200 g chorizo, sliced
- 1 tbsp garlic puree
- 2 tbsp tomato puree
- 2 onion, diced
- 2 tbsp smoked paprika
- 2 tbsp garlic granules
- 2 tbsp oregano
- 2 tbsp cajun seasoning
- 3 tsp salt
- 2 tbsp white wine vinegar
- 400 ml chicken stock
- 240 ml single cream
- 240 g cheese
- olive oil
- 620 g potato, cubed

## Instructions

1. Preheat the oven to 220C.
2. Mix the 1 tbsp of garlic granules, 1 tbsp of smoked paprika, 1 tbsp of cajun seasoning, 1 tbsp of oregano, and 1 tsp of salt together for the potatoes.
3. Coat the 620g of potatoes in a little olive oil before mixing in the spice blend.
4. Cook the potatoes for 20 minutes to 25 minutes until tender.
5. Meanwhile, cook the 100g of chorizo in a pan until crispy, then remove from the pan and set aside for later.
6. Add the 500g of chicken to the pan along with the 0.5 tbsp of smoked paprika, 0.5 tbsp of garlic granules, 0.5 tbsp of oregano, 0.5 tbsp of cajun seasoning, and 1 tsp of salt.
7. Once the chicken is browned, add the 1 onion and 2.5 peppers and cook until soft.
8. Stir in the 1 tbsp of tomato puree, 0.5 tbsp of garlic puree, and 1 tbsp of white wine vinegar and cook for 1 minute.
9. Add the 200ml of chicken stock and 120ml of single cream.
10. Simmer until the liquid has reduced into a thick sauce, then stir in the cooked chorizo and potatoes.
11. Top the dish with 120g of cheese and melt under a grill until golden and bubbly.
