# Cajun Sausage Pasta

## Ingredients

- 320 g pasta
- olive oil (for frying)
- 6 piece pork sausage, deskinned (Tesco finest work best)
- 1 piece red onion, finely chopped (large)
- 4 tsp cajun seasoning
- 2 tsp smoked paprika
- 4 tsp garlic puree
- 4 tsp dried parsley
- 4 piece fresh tomatoes, diced
- 2 tbsp tomato puree
- 4 tbsp cream cheese
- 80 g cheddar cheese, grated
- black pepper (to season)

## Instructions

1. Cook the 320g of pasta according to package instructions in a saucepan, ensuring you save a few ladles of pasta water before draining.
2. While the pasta is cooking, heat olive oil in a separate frying pan over a medium heat.
3. Add the deskinned 6 pork sausages, 1 red onion, 4 tsp of cajun seasoning, and 2 tsp of smoked paprika, then cook for 5 minutes, breaking up the sausages as they cook.
4. Add 4 tsp of garlic puree, 4 tsp of dried parsley, 4 tomatoes, and 2 tbsp of tomato puree, then cook for 2 minutes.
5. Stir in 4 tbsp of cream cheese and some reserved pasta water. Add a little at a time to get the desired consistency.
6. Bring to a simmer.
7. Add 80g of cheddar cheese and the cooked pasta, ensuring everything is coated and the cheese has melted.
8. Season with black pepper.
