Ingredients
- 320g of pasta
- olive oil – for frying
- 6 pork sausages (deskinned) – Tesco finest work best
- 1 red onion (finely chopped) – large
- 4 tsp of cajun seasoning
- 2 tsp of smoked paprika
- 4 tsp of garlic puree
- 4 tsp of dried parsley
- 4 fresh tomatoes (diced)
- 2 tbsp of tomato puree
- 4 tbsp of cream cheese
- 80g of cheddar cheese (grated)
- black pepper – to season

Instructions
- Cook the pasta according to package instructions in a saucepan, ensuring you save a few ladles of pasta water before draining.
- While the pasta is cooking, heat olive oil in a separate frying pan over a medium heat.
- Add the deskinned pork sausages, red onion, cajun seasoning, and smoked paprika, then cook for , breaking up the sausages as they cook.
- Add garlic puree, dried parsley, tomatoes, and tomato puree, then cook for .
- Stir in cream cheese and some reserved pasta water. Add a little at a time to get the desired consistency.
- Bring to a simmer.
- Add cheddar cheese and the cooked pasta, ensuring everything is coated and the cheese has melted.
- Season with black pepper.
