Cajun Sausage Pasta

A hearty and creamy pasta dish with spicy Cajun sausage, fresh tomatoes, and a cheesy sauce.

Ingredients

  • 320g of pasta
  • 6 pork sausagess (deskinned) – Tesco finest work best
  • 1 red onion (finely chopped) – large
  • 4 tsp of cajun seasoning
  • 2 tsp of smoked paprika
  • 4 tsp of dried parsley
  • 4 tsp of garlic puree
  • 4 fresh tomatoess (diced)
  • 2 tbsp of tomato puree
  • 80g of cheddar cheese (grated)
  • 4 tbsp of cream cheese
  • black pepper – to season
  • olive oil – for frying

Instructions

  1. Cook pasta according to package instructions, ensuring to save a few ladles of pasta water before draining.
  2. While pasta is cooking, heat some oil in a separate pan on medium heat.
  3. Add the deskinned sausages, red onion, cajun seasoning and paprika and cook for 5 minutes, breaking up the sausages as they cook.
  4. Add in the garlic puree, dried parsley, tomatoes and tomato puree and cook for a few more minutes.
  5. Stir in cream cheese and some pasta water. Add a little at a time to get desired consistency.
  6. Bring to a simmer.
  7. Add in grated cheese and cooked pasta ensuring it's all coated and melted.
  8. Season with black pepper.
