# Bruschetta Chicken

## Ingredients

- 115 g cherry tomato, chopped
- 1.5 tbsp lemon juice
- 0.5 tbsp balsamic vinegar
- basil, chopped
- 0.25 tsp kosher salt
- 0.25 tsp black pepper
- 1 tsp herbes de provence
- 1 tsp italian seasoning
- 0.5 tsp dried thyme
- 1.5 tbsp olive oil
- 2 chicken breast
- mozzarella
- potato wedges
- salad

## Instructions

1. Preheat oven to 190°c.
2. In a bowl, add chopped 115g of cherry tomatoes, 1.5 tbsp of lemon juice, 0.5 tbsp of balsamic vinegar, basil, 0.25 tsp of kosher salt, and 0.25 tsp of black pepper. Combine well.
3. Mix the 1 tsp of herbes de provence, 1 tsp of italian seasoning and 0.5 tsp of dried thyme in a small bowl.
4. Coat a baking dish with a little 1.5 tbsp of olive oil. Arrange the 2 chicken breasts in the dish, then sprinkle half of the seasoning mixture on one side.
5. Flip the chicken and season the other side, rubbing the seasoning around to coat.
6. Top with slices of mozzarella. Arrange the tomato mixture on top and around the sides of the chicken.
7. Bake for 35 minutes to 40 minutes.
8. Serve with potato wedges and salad if desired.
